It bears the protected designation of origin (PDO).

Prosciutto is made from a pig's leg, which is first salted to extract moisture, and then left to dry and mature.

The drying process takes several months or even years.

Prosciutto has a recognizable salty, sweet taste and delicate texture. It has a reddish color and a light marbling appearance of fat.
